This week’s meal plan is all about celebrating the special moments, especially with Mother’s Day right around the corner! SO I’ve included one of my favourite recipes, my Gluten-Free Ricotta Pancakes, that are ideal for a delicious, feel-good brunch to make anyone feel a little extra special!!
I’m also sharing a new meal prep staple I’ve been loving lately: my cottage cheese wraps! They’re super easy to throw together and the perfect protein-packed addition to your lunch lineup!
AND of course, I’ve included my brand new Kale Edamame Dip, a plant-based snack that’s loaded with protein and fiber, and pairs perfectly with crackers, pita, or fresh veggies!!
